Retired USDA meat marketing specialist Steve Olson will be demonstrating some of the newly developed beef cuts. These cuts can add value to your direct marketing/freezer trade sales! He will also discuss software he helped develop highlighting meat cuts. Beef cuts will be demonstrated but pertains to other species, too.

  • Fresh vs. Frozen - Negative quality issues associated with freezing of meat
